Delicious Mexican Cornbread

Ingredients:

  • Non Stick Cooking Spray or Butter (for greasing the pan)
  • Milk - 2/3 cups
  • Eggs - 2
  • Salt - ½ tsp
  • All Purpose Cornmeal - 1 cup
  • All purpose Flour - ½ cup
  • Baking Powder - 2 tbsp
  • Vegetable Oil - 1/3 cup
  • Onion (chopped) - ½ cup
  • Creamed Corn - 1 can
  • Cheddar (grated) - 1 cup
  • Jalapeno Peppers (chopped) - 1 cup

Procedure:

  • To begin preheat the oven to 350 degrees. Now take a square pan that is 9*9 inches and grease it with softened butter or the cooking spray. When that is done put it aside.
  • With that done take a large bowl and in it mix the baking powder, flour, milk, eggs, salt, oil and cornmeal. Now stir in the creamed corn and onion. Take the prepared batter and put half of it into the prepared pan.
  • Take the peppers and cheese and spread onto the batter. Next take the remaining batter and pour it over the peppers and cheese and then bake for about 35 minutes or until it turns golden on top. After the Mexican cornbread is cool, cut it into squares and serve.

Easy Mexican Cornbread

Ingredients:

  • Whole Corn Kernel (drained) - 1 can
  • Ground Beef - 1 lb
  • Cheese (shredded) - 1 lb
  • Onion (chopped) - 1 lg.
  • Cream Corn - 1 can
  • Mexican Cornbread Mix - 2 packages
  • Jalapenos (to taste)

Procedure:

  • To make this Mexican cornbread first cook and drain the ground beef. Now mix the cornbread according to the directions on the package. Then add both the cans of corn.
  • When that is over, grease the pan and in it add half the cornbread mix. Then add the onions, beef, jalapenos and cheese. Put another layer of the cornbread mix and bake it at 350 degrees for about 45 to about 60 minutes.

Fried Mexican Cornbread

  • Cornmeal - 2 cups
  • Milk - 1 ½ cups
  • Egg - 1
  • Oil - ¼ cup
  • Cheddar (shredded) - 1 cup
  • Onion (diced) – 1
  • Red Pepper (crushed) - 2 tbsp
  • Sugar - 3 tbsp

Procedure:

  • Take a mixing bowl and combine all the ingredients in it. Then take a skillet and in it put a small amount of oil.
  • Put the skillet on a medium flame and in it drop large spoonfuls of the mixture. Cook until both the sides turn a golden brown in color. Ensure you turn it only once to avoid breaking it.

Yummy Mexican Cornbread

Ingredients:

  • Yellow Cornmeal - 1 cup
  • Baking Powder - 1 tsp
  • Baking Soda - ½ tsp
  • Salt - ½ tsp
  • Shortening - 1 tbsp
  • Sour Cream - 8 oz
  • Cream Style Corn - 8 ½ oz
  • Eggs (beaten) - 2
  • Cheddar (shredded) - 1 cup
  • Green Chiles (drained and chopped) - 4/5 oz

Procedure:

  • In a 9 inch cast iron skillet place the shortening and heat at 450 degrees F. Let it remain in the oven for about 3 to 5 minutes.
  • When that is done combine the soda, salt, baking powder and cornmeal and blend them well. Now combine the corn, eggs, sour cream and mix them well. Take this mixture and combine it with the dry ingredients and stir until it is moist.
  • Using a spoon put half the batter into the hot skillet and sprinkle the cheese and chilies. Use the remaining batter as the next layer. Bake the cornbread for 23 to 25 minutes in an oven heated to 450 degrees. Cool for about 5 minutes before cutting into slices.

Tasty Mexican Cornbread

Ingredients:

  • Butter (melted) - 1 c
  • Sugar - 1 c
  • Eggs - 4
  • Cheddar Cheese (shredded) - ½ c
  • Flour - 1 c
  • Yellow Cornmeal - 1 c
  • Baking Powder - 4 tsp
  • Salt -1/4 tsp
  • Cream Style Corn - 15 oz can
  • Green Chile Peppers (drained) - ½ can
  • Monteray Jack Cheese (shredded) - ½ c

Procedure:

  • To begin, lightly grease a 9 * 13 inch baking dish and also preheat the oven to 300 degrees. Then take a large bowl and in it beat the butter and sugar together. Now beat the eggs one at a time and then blend in the other ingredients such as the corn, cream, chilies and the two kinds of cheese.
  • Take another bowl and in it stir together the cornmeal, baking powder, salt and flour. Add this mixture to the other mixture and stir until it turns smooth. When that is done pour into the prepared pan and bake in a preheated oven for about an hour.
